Flower Lane Garden Club meets on the third Tuesday of most months at the East Portland Community Center, 740 S.E. 106th Ave. Club activities include field trips, guest speakers and this month it holds its annual flower show on June 7 from 10 a.m. until 2 p.m. at EPCC.

Summer is around the corner. Really, it is! Send us your recipes for outdoor dining or those suitable for a picnic supper while enjoying music in the park. Submissions should be sent to editor@midcountymemo.com or 3510 N.E. 134th Ave. no later than Wednesday, June 15 for consideration for the July issue. Fax submissions can be sent to 503-249-7672.

Orange Macaroons
1 package sweetened coconut flakes (approx. 5-1/2 cups)
1/3 cup sugar
6 tablespoon flour
4 egg whites, lightly beaten
2 teaspoons grated orange zest
1 teaspoon orange extract
6 ounces semi-sweet chocolate chips

Heat oven to 325 degrees.
Mix coconut, sugar and flour in large bowl. Stir in beaten egg whites, grated peel, and extract until well blended. Drop by tablespoonfuls about 1 1/2 inches apart onto lightly greased or nonstick cookie sheets lightly sprayed with cooking spray.

Bake 20-30 minutes or until golden brown on bottom and browned in spots on top. Cool completely on sheets.

Melt chocolate in microwave. Using a fork, drizzle chocolate over macaroon tops. Chill until chocolate is firm. Yield: about 2 dozen.
